Preheat oven to 375 degrees F (190 degrees  degrees C). Grease a large baking dish with cooking spray. Heat olive oil in a large skillet over medium heat. Add diced onion and garlic, and sauté until both are translucent. Add chicken pieces to the skillet, and cook until browned on all sides. Pour white wine into the skillet, and simmer for 5 minutes. Remove from heat.  

Mix tomatoes with their juice, thyme leaves, green onions, and parsley. Season mixture with salt and pepper to taste. Place chicken pieces in the prepared baking dish. Pour tomato mixture over chicken pieces. Bake for 30 minutes in the preheated oven, or until chicken is cooked through.

Instructions:

Coat the chicken in flour. Heat the oil in a large skillet over medium heat and sauté the chicken until golden brown. Add the onion and garlic and continue cooking until the chicken is cooked through. Pour in the white wine and let it simmer for a few minutes. In a small saucepan, melt the butter over low heat. Stir in the flour and continue cooking for a minute. Gradually add the milk, whisking continually until smooth. Season with salt and pepper to taste. Add the nutmeg and cayenne pepper, if desired. Pour the sauce over the chicken and sprinkle with Parmesan cheese before serving. Enjoy!
